Serves 2 · 20 min prep · 25 min bake · no flour

You need

  • 2 cups grated zucchini (1 large)
  • 2 eggs
  • 1 cup shredded mozzarella
  • ¼ cup grated parmesan
  • Pinch of salt, dried oregano

Steps

  1. Salt the zucchini, wait 10 min, squeeze it dry in a towel.
  2. Mix with eggs and both cheeses.
  3. Press thin on parchment, bake at 400°F for 20–25 min until golden.

How

  1. Stand facing the counter, hands resting on the edge.
  2. Rise slowly onto your toes, hold for a count of two.
  3. Lower down and rock back onto your heels, toes lifting.
  4. Repeat, slow and steady, for one minute.

Sunday Rosemary Hair Oil

Makes 1 small jar · steeps 2 weeks

You need

  • 4–5 sprigs dried rosemary
  • Olive oil to cover
  • A clean glass jar with a lid

Steps

  1. Pack the rosemary into the jar, pour olive oil over to cover.
  2. Close, leave on a sunny sill for two weeks, shake now and then.
  3. Strain. Comb a few drops through your ends on Sunday, wash out after an hour.
The honest part: it won't regrow hair. It leaves the ends soft and shiny, and your bathroom smells like a garden.

About Lena

A notebook from Andalusia, a kitchen in Texas

My Abuela came from a little whitewashed town in Andalusia and ended up in the Texas Hill Country, where I grew up at her elbow. She never owned a cookbook. Everything lived in one fat, flour-dusted notebook she called "the almanac" — recipes, remedies for a tired body, what to plant when, and a lot of opinions in the margins.

She baked bread without flour when there wasn't any, rubbed olive oil into her hands every night, and never sat down right after dinner. Those little habits are the ones I kept.

When I turned forty I started typing that notebook up, one page at a time. This book is the result: the recipes and rituals I actually use, tested in my own kitchen, written plainly so you can start tonight.
